Here are two recipes that are delicious that my friend Kath requested. One of my favorite Irish cookbooks is by Monica Sheridan called The Art of Irish Cooking. She does the more traditional Irish recipes and so here are two of them:
White Soda Bread
Ingredients
4 cups of all purpose flour
1 teaspoon salt
14 oz of buttermilk
Directions
Preheat oven to 425 degrees F.
Lightly grease a cake pan.
In a large bowl, sieve and combine all the dry ingredients.
Rub in the buttermilk.
Add the buttermilk to form a sticky dough.
Place on a floured surface and lightly knead.
Shape into a round, flat shape in a round cake pan and cut a cross on the top of the dough.
Cover the pan with another pan and bake for 30 minutes( this simulates the bastable pot)
Remove the other pan and bake for an additional 15 minutes.
Cover the bread with a tea towel, and sprinkle the towel with water to keep the bread moist.
It seems every house has a pot of Irish vegetable soup , so here is a really yummy recipe:
Irish Vegetable Soup
Ingredients
3 good sized carrots chopped
2 leeks chopped ( green and white)
1 stalk of celery chopped
1 bunch chopped parsley
4-5 chicken stock cubes
3-4 vegetable boullion cubes
1-2 teaspoons ground thyme
1 teaspoon ground thyme
1 teaspoon ground sage
1 and a half teaspoons of cayenne pepper
1 teaspoon of ground cumin
1 cut of broken pasta
salt and pepper
water
boiled potato...about 1.5 per person
Directions
Place carrots, parsley, leeks, carrots, and soup mix( optional) in stock or soup pot.
Cover with cold water until all the vegetables are covered.
Bring to boil and add stock cubes and spices.
Simmer until vegetables are soft.
Season to taste.
If you add pasta, do this now, until it is cooked.
Serve with potatoes in a bowl.
The whole boiled potatoes are put in the soup at time of serving.
Well, there are two very popular Irish dishes. Hope you enjoy it! These are particularly good on a cold, winter's day.
